Scallops or Shrimp Caribbean

Ingredients

1/4 cup sugar

2 tablespoons cornstarch

1/8 teaspoon salt

1/2 cup orange juice

1/3 cup white vinegar

1/2 cup water

1 pound bay scallops or shrimp, shelled and deveined

2 teaspoons grated orange peel

1/2 pound mushrooms, sliced

1 medium orange, peeled and cut into bite-size pieces

1/4 pound snow peas

1/4 cup sliced green onions

3 cups cooked long-grain rice

3 tablespoons sliced almonds

Instructions

In a large skillet, combine sugar, cornstarch, and salt. Slowly stir in orange juice, vinegar, and water.

Stir constantly over medium heat until mixture thickens.

Add scallops or shrimp and orange peel.

When shellfish is cooked through (5 to 10 minutes) add mushrooms, orange pieces, snow peas, and green onions.

Serve over rice, topped with almonds.
